Apricot Jam Pots

Ingredients
2 cups good grade oleo
1 cup powdered sugar
2 tbsp corn starch
4 cups flour
apricot jam or any other flavor
2 eggs
1 cup sugar
2 cups coconut
Directions
Mix ingredients together and roll into small balls. Press into miniature tart pans and up the sides. Put 1/2 tsp. thick jam into each pot. Beat eggs and sugar together until fluffy, then add coconut. Spoon 1/2 tsp of this on top of jam. Bake at 350 degrees for 25 minutes until light brown. Cool 10 minutes before removing from pan.
