Date Bar Cookies

Ingredients
Filling:
3 cups dates, chopped
1/4 cup granulated sugar
1 1/2 cups water
Crust:
1 cup brown sugar, firmly packed
1/2 tsp. baking soda
1 tsp. salt
1 1 /2 cups old-fashioned rolled oats
3/4 cup very cold butter cut into small cubes
Directions
In saucepan, over low heat, combine dates, sugar and water. Cook stirring constantly until thick. Cool completely. In large bowl,place brown sugar, flour, baking soda,s alt and oats. Mix on low speed until combined. Whie mixer is running, add butter 1 or two pieces at a time. Mix until crumb-like.
Using your hands, press and flatten hald of crumb mixture into a greased 9x13” pan.
Spread cooled filling over crust. Cover with reamaining crumb mixture, patting lightly. Bake at 350 degrees for 25 minutes or until lightly browned. Cool slightly and cut into bars.
