Italian Lemon Cookies

Ingredients
6 whole eggs
1 cup sugar
1 cup oil
4 cups flour, sifted
3 tsp. baking powder
2 tsp. lemon extract
Directions
Mix together by hand. Let dough rest in refrigerator for about 1/2 hour. Roll into balls. Bake at 375 degrees for 10-12 minutes on ungreased cookie pan. Cool, then ice with lemon flavored icing. Makes about 6 dozen cookies.
