Ingredients

1 Cup All Purpose Flour
1/2 Cup Butter or Margarine, softened
1/2 Cup Confectioners Sugar
2 Large Eggs
1 Cup Granulated Sugar
1/2 Teaspoon Baking Powder
2 Tablespoons Lemon Juice
1/2 Teaspoon Salt
1 1/2 Teaspoon Grated Lemon Peel

Directions

Heat oven to 350º. Mix well the flour, butter and confectioners sugar. Press in ungreased square pan, 8x8x2 inches, building up a 1/2 " edge. Bake for 20 minutes. Beat remaining ingredients about 3 minutes until light and fluffy. Pour over hot crust. Bake about 25 minutes longer until no imprint remains when touched lightly in the center. Cool and cut into squares. Makes about 25 squares.
