Pumpkin Loaf

Ingredients

1 Cup (minus 2 tblsp.) Pure Pumpkin
1/2 Teaspoon Ground Cinnamon
1/2 Teaspoon Ground Nutmeg
1/2 Teaspoon Ground Cloves
3/4 Cups Water
1 3/4 Cups Brown Sugar
2 Large Eggs
1/2 Cup Oil

In another bowl, mix:
1 3/4 Cups Flour
1 Teaspoon Baking Soda
1/4 Teaspoon Salt

Directions

In a small sauce pan heat, stirring continuously until pumpkin is stiff (3 minutes). Transfer to medium bowl. Whisk in water and brown sugar. Slightly beat the eggs then whisk in with oil. Mix until smooth. Fold Dry Mix into pumpkin mixture until combined. Put into loaf pan and cook for 50 to 60 minutes at 350º. Leave in pan for a few minutes, then cool on a wire rack until room temperature.
