Apple Cake w/ Wine Sauce

Ingredients

6 Slices White Bread
3/4 C. Milk
1 1/2 C. Apple peeled, cored and minced
1/4 C. Rum
1/2 Tea. Salt
1 1/2 Tea. Cinnamon
3 Table. Raisins
1 Table. Cooking Oil
1/2 Lemon Rind Grated
3 Table. Almonds, chopped
2 Eggs separated
1/2 C. Sugar

Directions

Trim crust from bread and put bread in bowl. Add milk and let stand until milk is absorbed. Beat with spoon until smooth. Add remaining ingredients except egg whites and wine sauce. Mix well. Fold in stiffly beaten egg whites. Pour into greased 8x8x2 inch cake pan. Bake in moderate 350 degree oven for one hour or until firm. Serve with wine sauce (recipe below).

Creamy Wine Sauce
In top part of double boiler, mix 2 slightly beaten egg yolks, 2 tablespoons sugar, 1/2 tea. Salt and 1 cup light cream. Cook over simmering water until slightly thickened, stirring constantly. Remove from heat and stir into 2 stiffly beaten egg whites. Stir in 2 tablespoons dry white wine. Cool and mix well before serving.
