Chicken Quesadillas

Ingredients

4 chicken breasts, cut in strips.
1 green pepper chopped (small)
1 onion chopped (small)
2 cups shredded cheddar and monterey jack cheese
8 large tortilla shells
vegetable oil
sour cream
salsa
guacamole
tomatoes

Directions

Preheat oven to 350 degree. Slice chicken into strips,
cook until brown in pan. Add green peppers and onions;
cook until soft. On large cookie sheet, make a sandwich with
flour tortillas as your bread. Fill with chicken, peppers, onions
and cheese. Rub or spray vegetable oil on outside of the shells.
Cook for 10 minuntes (more if you like them crunchy, cook
longer). Serve with lettuce, sour cream, guacamole or tomatoes.
