Cheeseburger Soup

Ingredients

1/2 pound ground beef
4 Tbsp margerine
3/4 cup each chopped onion, celery and carrots
2 cans chicken broth
4 cup diced potatoes
1/4 cup flour
2 cup Velveeta shredded
1 can evaporated milk
salt and pepper

Directions

Brown ground beef, melt 1 tbsp margerine in sauce pan. Add onion, carrots and celery. Cook 10 minutes. Add broth, potatoes and ground beef. Bring to boil. Reduce heat to low, cover and cook 10-12 minutes. Melt remaining margerine in small sauce pan. Add flour, cook stirring constantly 3-5 minutes. Add to soup, bring to boil, cook stirring occasionally two minutes. Reduce heat to low and add cheese, evaporated milk, salt and pepper. Stir till cheese is melted.
