No Bake Coconut Balls

Ingredients

1 cup sugar
1/4 cup shortening
1 cup walnuts, chopped
20 oz. cake crushed pineapple, well drained
2 boxes vanilla wafers
12 oz. Cool Whip
shredded coconut and chopped nuts for rolling

Directions

In medium bowl, blend well sugar and shortening. Mix in nuts and pineapple, cover and refrigerate overnight. Next day, spread 1/2 tsp of filling between two vanilla wafers. Roll filled wafers in Cool Whip hten roll in coconut or nuts, place in small foil cups. Freeze in tightly, covered containers. Remove from freezer about five minutes before serving. Makes 8 dozen.
