Sweet Potato Pie

Ingredients

1 1/4 c. sugar
3 large eggs
dash of salt
1 tsp. of lemon juice
1 tsp. powdered allspice
1/2 tsp. powdered nutmeg
1 c. heavy cream
3 c. cooked sweet potatoes, mashed (slightly cooled)
1-10 inch pie shell, unbaked

Directions

Beat eggs well. Mix sugar, salt and spices together, mix thoroughly, add mixture to eggs and blend thoroughly. Add cream and stir, add lemon juice and stir. Add mashed potatoes and mix throughly. Turn into pie shell and bake in a preheated 350 degree oven for 1 hour, or until firm.
