Apricot Bars

Ingredients

1 cup dried apricots, halved
1 cup flour
1 tbsp lemon juice
1 tsp baking powder
1/2 cup raisins
powdered sugar as desired
1 tbsp butter, soft
2 eggs beaten
1 cup sugar
1/2 cup pineapple, diced and drained
powdered sugar as desired

Directions

Preheat oven to 350 degrees. Grease and flour 8x8x2 baking dish. In small bowl, cook apricots according to package for 10 minutes. Drain and set aside. In small bowl, combine flour and baking powder, set aside. In large bowl cream butter and eggs, add sugar, cream until light and fluffy. Add lemon juice, gradually add flour mixture to eggs, beat well. Add raisins, then pineapple (pineapple must be well drained), then apricots, mixing well after each addition. Spread mixture in prepared pan, bake 45 minutes until light brown. Cool, sprinkle with powdered sugar. Makes 2 dozen.
