Microwave Brittle

Ingredients

1 c. sugar
1/2 c. light corn syrup
1 1/4 c. dry roasted peanuts
1 T. margarine
1 1/4 t. vanilla
1 t. baking soda

Directions

Combine sugar and corn syrup in a 2 qt. casserole. Microwave on high power for 5 minutes. Blend in peanuts and microwave another 4 minutes, or until syrup and peanuts are lightly browned. Stir candy halway though cooking. Add margarine, vanilla, and baking soda and stir unti light and foamy. Pour britle onto margarine-coated baking sheet and spread to a thickness of 1/4 inch. Yield: 1 poubd
