Christmas Cookies

Ingredients
1 cup sweet butter
1 1/2 cups sugar (divided)
1 egg yolk
1/2 tsp. salt
2 1/2 cups sifted flour
4 egg whites
1 cup ground walnuts
1 cup chopped walnuts
1 cup black raspberr jelly
1/2 tsp. lemon extract
Directions
Cream butter with one half cup of sugar. Stir in egg
yolk. Sift together salt and flour and stir into butter
mixture. Pat dough into a thin layer in the bottom of a
10 X 15 baking pan. Beat egg whites until stiff but not dry.
Add remaining cup of sugar gradually and continue beating
till mixture stands in stiff peaks. Fold in ground walnuts
and lemon extract. Spread jelly over top of dough. Spread
merigue over top of jelly. Spinkle meringue with chopped nuts.
Bale at 350 degree for 40 minutes.
Notes
Cut in squares. Makes about 30 to 40 cookies.
