Date and Nut Cookies

Ingredients
2 cups pitted dates
1 cup brown sugar
3/4 cup water
1/2 cup shortening
1 well beaten egg
2 cups flour
1/2 tsp salt
1/2 tsp cream of tartar
1/2 cup sugar
1/2 tsp vanilla
1/2 tsp soda
1 cup nuts
Directions
Filling: Chop dates. Put package of dates to boil. Add 1/2 cup sugar and water. Let cook until thick. Cool and add nuts.
Cookie Mixture: Blend brown sugar and shortening. Add egg and vanilla. Sift together tthree times. Add 2 cups of sifted flour, soda, salt and cream of tartar. Add the two mixtures. Bake at 375 degrees for about 10 minutes. Press out between two pieces of waxed paper. Spread date mixture over cookie dough and roll as jelly roll. Wrap well and put in freezer. Keeps in freezer for several months.

Grease cookie sheet before baking.
